3-in-1 mince mix

This meal regularly saves me from getting takeaway or feeding the kids toast for dinner. Adjust quantities to suit – we have five in the family but various kids are fussy about various things and don’t eat them, or eat very little of them.

1kg lean beef mince
1 large brown onion
1 large carrot
handful of oats
freshly ground black pepper

Roughly chop carrot and onion, chop finely in Thermomix or food processor. Add oats and pulverise. Add mince, chop some more until it is the desired texture. Season with pepper.

I divide this into:
– meatballs. We do them small, place in fridge to firm up, and put under a hot grill until cooked. E1 and A eat these plain with pasta & broccoli, E2 will tolerate a couple of meatballs as long as she has pasta sauce (which I make in the Thermomix while the meatballs are refrigerating and cooking) over hers. I usually have steamed cauliflower & broccoli instead of pasta, with meatballs and sauce. One meal that night, enough meatballs for another night in the freezer.
– burger patties. I make 5, enough for the family, and freeze in a container with layers of baking paper between. This becomes either another dinner or we can take them out one at a time for lunches, or whatever’s needed. Make the patties thin enough that you can cook straight from the freezer.
– sausage rolls. Puff pastry sheets, cut in half, make a sausage of mince mixture down the middle, roll, cut, freeze or bake. Sometimes I bake that night and use for the next couple of days’ lunches.
